Red Cream Lager

OG = 1.052 | FG = 1.013 | ABV = 5.0% | IBU = 17 | Color (L) = 8-10

Description: The clean crisp character of the Mexican lager yeast allows the smooth, sweet creamy flavor of the Caracrystal Wheat Malt to shine through in this balanced red lager.  Recipe for 5 gallons (19L).

Quantity Ingredients Comment
5 lbs. Briess CBW® Pilsen Light LME (may use 6.6 lbs. liquid)
8 oz. Briess Carapils® Malt (preground)
12 oz. Briess Caracrystal® Wheat Malt (preground)
1 tsp. Irish Moss (boil 15 min.)
1/2 oz. Halltertau Pelletized Hops (6.5% AA hop) (boil 45 min.)
1/4 oz. Halltertau Pelletized Hops (6.5% AA hop) (boil 15 min.)
1/4 oz. Halltertau Pelletized Hops (6.5% AA hop) (boil 1 min.)
1 vial White Labs WLP940 (Mexican Lager) yeast

Instructions:

  1. Steep malts in 4 gallons 150-180° F water for 15-20 minutes.
  2. Remove from heat. Add CBW® and bittering hops, bring to a boil for 30 minutes.
  3. Add second hops and Irish Moss.  Boil 15 more minutes.
  4. Add aroma hops and remove from heat.
  5. Cool to 55-60° F, oxygenate wort and pitch yeast.

Fermentation
Primary: 14 days at 55° F | Secondary: 14 days at 35° F | Bottle Condition or Force Carbonate
