Setting Sun – American IPA

Description: Crisp, smooth, and a breeze to brew.  This European-descended, revolution-inspired, ale is intended to remind all that the sun does set on the British Empire.  Brewed with Charlie Papazian’s versatile yeast strain Cry Havoc, Briess Caracrystal® Wheat Malt enhances its smooth malty character.  Recipe for 5 gallons (19L).

Quantity Ingredients Comment
6.6 lbs Briess CBW® Golden Light LME
1 lb. Briess CBW® Golden Light DME
8 oz. Briess Caracrystal® Wheat Malt (steep)
2 oz. Cascade hop pellets (6% AA hop) (boil 60 min.)
1 oz. Cascade hop pellets (6% AA hop) (boil 15 min.)
1 oz. Cascade hop pellets (6% AA hop) (boil 1 min.)
1 vial White Labs WLP862 (Cry Havoc) Yeast

Instructions:

  1. Steep grains in 5 gallons 150-158° F water for 15-20 minutes.
  2. Remove from heat.  Add CBW® Pilsen Light LME and DME and bring to a boil.
  3. Add bittering hops and boil for 45 minutes.
  4. Add flavoing hops and boil for 15 minutes.
  5. Add aroma hops and boil for 1 minute.
  6. Cool to 70° F, oxygenate wort and pitch yeast.

Fermentation
Primary:  10 days at 70° F  |  Secondary:  14 days at 35° F  |  Bottle Condition
